The collagen product is prepared from collagen-containing tissue from slaughtered animals, and in the process the collagen-containing tissue is, at temperatures not exceeding 40 DEG C, finely comminuted and subsequently fat and unwanted water-soluble ballast materials are simultaneously removed by extracting the tissue suspension several times with 5 times the volume of 5-15 % strength aqueous NaCl solution which contains 0.1-1 % sodium azide as preservative and a fat-dispersing wetting agent, and treating the resulting tissue with a proteolytic enzyme which does not attack the basic structure of the collagen but breaks down non-collagenous proteinaceous concomitant substances and telopeptides. |
