abstract | A dry dessert mix for preparing a yoghurt-like desser tby reconstitution with milk comprises (a) pregelatinised starch, (b) an edible acid in an amt. sufficient to give a pH of 3-5 in the reconstituted mixt, and (c) a hydrocolloid gum. The mix can be reconstituted quickly (ca 5 min.) and simply with cold milk without coagulation of the milk proteins, giving a product which does not deteriorate on standing for relatively long periods. |
