abstract | The skin is removed from fish fillets by denaturing. The skin is sprayed in one direction with a fluid or some other medium and afterwards in the other direction with another medium under pressure, to remove the loosened skin and also possibly the remains of fins, etc. To denature the skin and break it down to a gelatinous consistency by dissolving the pepsidin, the fish is first sprayed with a soln of acetic or citric acid, and then, to remove the skin, the fish is sprayed with water. The process mechanises the operation of remving the skin, with negligible loss of flesh. |
