abstract | Yeast mutants with increased citric acid-producing activity are obtd. by treating known citric acid-producing yeasts with mutation-inducing media, inoculating the treated yeast cells into a nutrient medium and culturing in the presence of increasing concentrations an aconitase inhibitor or a citric acid antimetabolite or their precursors and the enriched yeast mutant is then isolated. A final concn. of aconitase-inhibitor, etc. of 1 mol/l. is used. The critic acid antimetabolite is pref. a monofluoroacetate. The yeast strain is pref. Candida oleophila or Candida lipolytica. |
