abstract | Sweetener for food and drink industry contains, by wt. 10-50 (20-40) % laevulose, bal. either (1) 50-70% starch hydrolysate (I) having a 1-25, dextrose equiv. and contg. >=60 wt.% polysaccharide having a degree of polymerization (DP) >4, provided final compsn. contains >=40% polysaccharide of DP >4, or (2) 1-40 (10-40)% dextrose and 50-70% starch conversion prod. (II) having a 40-50 dextrose equiv. and contg. 40-70 wt% maltose. Compsn. contg. (I) may contain additional dextrose. Compsn. e.g. contains 10-50% laevulose, 2-40% dextrose and 50-70% (I), provided laevulose + dextrose content is =50% and content of polysaccharide of DP >4 is >=40%. Solid is prepd. by spray-drying a mixt. of water and compsn. pref. into hot air at 130-250 degrees C. Prod. is relatively non-hygroscopic. |
