abstract A mixt. f satd. and ethylenically unsatd. is not 10C fatty acids or their diol or polyol esters or a mixt. of mono-, di- or poly-ethylenically unsatd. is not 10C fatty acids of their diol or polyol esters is at least partially fractionated by contacting with amylose under complex forming conditions such that a proportion of the fatty components of the mixt. remains uncomplexed. The amylose may be in pure form or in the form of starch. Complexing is effected by heating in aq. medium at 40-90 degrees C for 1-4 hrs. at pH 6.0-9.0. Uncomplexed material may be recovered by extraction with water-immiscible solvents, and the amylose/fatty complex may be broken down and the complexed material recovered by treating with e.g. a 1-5C alkanol.
