abstract A composition of a lanthionine containing a bacteriocin and a chelating agent, wherein the bacteriocin is a thermostable bacteriocin, the same being isolated from a specific species of bacteria, namely Lactobacillus fermentum, the composition of a bacteriocin being characterized by:a polypeptide having a 15 amino acid sequence; anda molecular weight in the range of 1.2 to 1.4 kDa;wherein the bacteriocin composition exhibits antibacterial activity in the range of 7800 to 104150 U against gram negative bacteria, antifungal properties and activity against the yeast strain, wherein the bacteriocin composition exhibits activity and stability at a temperature ranging from 28 to 35°C in organic solvents and the bacteriocin composition further remains inactive towards collagen.
