abstract The invention relates to particles with small dimensions. At least on the surface, these particles have a wall which consists of a mixture of at least one protein and at least one polysaccharide, which have preferably been crosslinked by interfacial crosslinking with a polyfunctional acylating crosslinking agent to form at least amide and ester bonds and optionally of anhydride bonds with the amine, hydroxyl or carboxyl functions of the protein and the polysaccharide and which have hydroxam groups on the surface for the chelation with metal ions. DOLLAR A These particles can be used in particular in cosmetics or in pharmacy for binding in the form of a chelate or for the release of metal ions.
