titleOfInvention Protein component for dietary foods
abstract According to the invention, a protein component based on customary proteins used for the production of foods, of which at least 20% by weight have at least one phosphate residue which is covalently bound to the protein, is provided. This protein component is characterized in that 50 to 100 wt .-% of the proteins having at least one covalently bound phosphate moiety, were subjected to a dephosphorylation reaction in which 20 to 100% of the covalently bound phosphate residues were removed. The protein component of the present invention not only allows sufficient protein supply, but also passes the stomach rapidly and prevents backflow of gastric contents into the esophagus.
