The invention concerns a process for producing a dough made from a flour product, in particular one based on wheat. The flour product-water mixture is mechanically processed, energy being applied simultaneously, to cause agglomeration of the gluten proteins. The process is characterised by the fact that the mechanical processing of the flour product-water mixture is done using centrifugal forces. |
