Polysaccharide constituents of a pulp can be converted into fermentable carbohydrates and the saccharised mash fermented intermittently, continuously or with stirring in less than 36 hrs. by addition of hydrolase-containing enzyme complex preparations (glucosides, hydrolasses, E.C. 3.2.1), advantageously -amylase (1,4-glucan-4-glucanohydrolase, E.C. 3.2.1.1) and amylo-glucosidase (-1,4-glucan-glucohydrolase, E.C. 3.2.1.3.), where part of enzyme preparation can be replaced by malt. |
