abstract A system for measuring smoke absorption in food products includes a surrogate that is responsive to the presence of smoke in air surrounding the surrogate and food products; wherein the surrogate is configured to change a condition after exposure to the smoke to a preselected level for a time sufficient to cause a predetermined amount of smoke absorption by a selected food product. One method of making the system for measuring smoke absorption in food products includes placing the surrogate in air surrounding the surrogate in a smokehouse in which the food products are to be smoked, configuring the surrogate to post-exposure condition Change smoke for a time sufficient to cause a predetermined amount of smoke absorption by the food products; and measuring the change in state of the surrogate.
