abstract |
Composites or combinations of selected starches and collagen provide very useful casing materials for coextruded food products, such as sausages. The shell material includes collagen and starch. The starch is preferably a gel-forming undegraded amylose-containing disperse starch or a gel-forming undegraded chemically cross-linked or physically inhibited dispersed amylopectin starch. The starch is preferably characterized by a G 'of 600 Pa or greater at a frequency of 0.1 rad / s at 25 ° C when produced in a solid concentration of 10% by weight. The amount of starch to collagen is about 0.05: 1 to 10: 1 parts by weight on a dry basis. |
