abstract Enzymes from the group of delta-12 desaturases catalyze an important step in the synthesis of the polyunsaturated fatty acids that are essential for humans, which serve all eukaryotes as important structural elements of the cell membrane and control many vital processes in the organism. These are essential nutrients, the needs of which must be met primarily from plant and animal sources. Known organisms, in which a delta-12-desaturase enzyme occurs naturally, come exclusively from warmer regions, so that the production of fatty acids requires an economically and technically complex heat supply. However, organisms that have cold-adapted enzymes are also known. For an enzyme delta-12 desaturase, the invention therefore claims a coding nucleic acid sequence which originates from the cold-adapted marine diatom Fragilariopsis cylindrus and which is in accordance with SEQ ID No. 1 or as a functional variant or as a section with at least 8 nucleotides thereof. This provides a gene that encodes an enzyme with cold-adapted properties that is important in fatty acid production, so that particularly economical fatty acid production is made possible.
