abstract | A dietary food in the form of diet drinks, desserts, bars, soups, sauces, pastries, etc. is described. The fats are partially or completely replaced by naturally occurring fatty acids, avoiding the use of lipids, which are present as triglycerides and only have to be broken down into free fatty acids by lipases during digestion. Natural fatty acids with a chain length up to C18, which are saturated, monounsaturated or polyunsaturated, are added in combination with saturated fatty acids such as stearic acid or palmitic acid, but also other natural fatty acids up to C18 to provide energy. The essential fatty acids are linoleic acid and alpha-linoleic acid as free fatty acids, from which practically all other fatty acids required by the body, e.g. B. arachidonic acid, are synthesized by the body. The use of fatty acids as a substitute for fat in dietary foods is expected to improve energy and nutrient intake significantly in people with pancreatic insufficiency and cystic fibrosis. |
