abstract | The present invention relates to a process for the preparation of a feed or food comprising the steps of: (i) providing at least a first material stream, preferably comprising a meat and / or fish emulsion, (ii) preparing a viscous gel comprising at least one gelling component and a liquid, in particular water, by introducing the gel-forming component and the liquid into a mixing chamber, wherein the introduction of the liquid by means of a first nozzle unit under high pressure into the gel-forming component in the mixing chamber, (iii) providing the in step (ii) (ii) laminarly dispersing the second material stream in the first material stream in an apparatus for at least partially incomplete mixing of the first and second material streams so that the second material stream is in the form of droplets in a size of at least 0.3 mm, preferably 0.3 mm to 8 mm, distributed in the first material flow; (v) discharging the first stream of material containing the second stream of material in the form of droplets through a second nozzle unit, and (vi) solidifying the second Material flow in the form of droplets containing first material stream; and a food or foodstuff that can be produced afterwards. |
