abstract Described is a film-forming collagen concentrate containing at least 18 wt .-% dry matter, wherein at least 50 wt .-% of the protein from a prepared from the concentrate homogeneous suspension in a 0.15 molar aqueous sodium dihydrogen phosphate buffer having a pH of 7 and a calculated proportion of dry matter of 0.5 wt .-% by 15 min centrifugation at 1780 RFC at 15 ° C as a sediment can be separated. Preferably, it consists essentially of macroscopically visible collagen fibers. Also disclosed is a method for producing a food casing, in particular an artificial sausage casing, using a collagen concentrate.
