abstract A process is described for obtaining protein preparations with largely constant functional properties within a broad pH range from about pH 3 to pH 10 by means of extraction from a protein-containing starting product, namely legumes, cereals or oil seeds. DOLLAR A The invention is characterized in that the protein-containing starting product is subjected to at least one liquid extraction step and the raffinate or extract obtained in this way is either fed to at least one membrane separation process in which a retentate is obtained or is subjected to a thermal concentration in which a Concentrate is obtained, and that protein preparations with the desired functional properties are contained in the retentate or in the concentrate.
