abstract The invention relates to a method by which the required for the production of cheese chymosin no longer obtained from the abomasum of calves, but can be produced synthetically in any amount; at the same time, however, the synthesized natural chymosin should not differ in its chemical structure. For this purpose, an isolated chymosin gene is incorporated into a promoter plasmid, so that in several stages a transformable plasmid is produced, which is transformed into a suitable Bacillus strain. After submerged and aerobic propagation of the host cells and lysis of the cell mass obtained, an activatable prochymosin can be obtained. Fig. 1
