abstract | The invention relates to the production of smoked-colored foods which have been provided on the basis of a liquid smoke with a correspondingly treated wrapping. The object of the invention is to develop a new process for the production of a smoke-colored food in which optical parameters of the wrapping have been taken into account. According to the invention, the liquid smoke composition is characterized by an absorbance of at least about 0.15 at a wavelength of 340 nm and by a transparency of at least about 50%. The smoke coating applied to the food wrap is derived from a tarry liquid smoke composition and imparts an absorption index of at least about 0.2 at a wavelength of 340 nm to the wrapper. The wrapper also receives a liquid smoke extract having an absorbance at 210 nm Having a wavelength no greater than about 60% of the extinction of a similar extract of an identical wrapper with a comparable coating of the tar-containing liquid smoke composition sufficient to provide substantially the same absorbency index as the low-tar, liquid-smoking food wrap. |
