abstract The invention relates to a process for obtaining pollutant-free globulin and albumin fractions from vegetable thioglycoside-containing raw materials and from their processing products, especially from Brassica- and Crambesamen, for human nutrition. The invention has for its object to show the special conditions for such a process. It is essential for the process according to the invention that the fraction containing globulins is first obtained and that an aqueous extract containing albumin derived from myrosinase-inactivated and gently hydrolyzed raw materials is subjected to a membrane separation process. Of importance is that the resulting Retenat at a certain protein concentration during ultrafiltration periodic or continuous water or aqueous electrolyte solutions are supplied.
