This is achieved by tracking the time profile of a measurement signal of the periodically irregularly drying material web determined by the surface temperature, forming the effective value and / or the arithmetic mean value and / or the amplitude of the measurement signal over a specific time interval, and comparing the converted measurement signals with the limit air temperature and / or cooling limit temperature provides a size that is proportional to the mean moisture level of the web. The invention makes it possible to feed the drying process so that a predetermined residual moisture tolerance can be maintained.
