abstract | Means with preserved cocoa flavor and tastenproduced by passing natural gas-containing gas,npreferably from cocoa beans, one or more capacitorsnto remove water and substantially all of the acid presentnacetic acid. The flavor-containing gas can then be introduced into the gasna ctyogenic receiver in which it flows directly into the streamnaromatic gas sprays liquid nitrogen for the turbotncondensing the frozen flavor suspended in the streamnnitrogen gas and at the minimum of cooled contactngas with the monitors. Frozen aroma particle suspensionnin nitrogen gas is conducted through a tubular porous filter fornremoving the frozen flavor particles that are collected onnthe outer surface of the tubular filter, with nitrogen gasnpasses through the porous filter and the scavengers are deleted. Isolatednaroma particles suitable for addition to differentnfood products that are naturally requirednthe taste of cocoa or chocolate including soluble cocoanproducts, cake mixes, confectionery, etc. |
