abstract | The method of producing phytase in yeast, wherein an appA gene encoding a protein or polypeptide isolated from the bacterial cells is expressed in the yeast strain and the expressed protein or polypeptide is isolated. A protein or polypeptide obtainable by this method having phytase activity with an activity optimum at a temperature ranging from 57 to 65 degC and at a pH in the range of 2.5 to 3.5 or 5 to 5.5. Yeast strain and vector containing this appA gene. The method of converting phytate to inositol and inorganic phosphorus, wherein the protein or polypeptide expressed with the phytase activity as above is contacted with the phytate to catalyze the conversion of phytate to inositol and inorganic phosphorus. |
