The method of producing a semi-solid carbonated carbonated yoghurt and a scoopable detergent comprises contacting said acidic yoghurt with carbon dioxide gas with low shear agitation at a temperature ranging from 8 to 25 degC and a carbon dioxide pressure ranging from 0 to 770 kPa, for a period of from 1 to 180 minutes, producing acidified yoghurt having (a) a viscosity, at a temperature in the range of from 1.5 to 25 degC, in the range from 2 to 200 Pa.s, and (b) ) carbonation level in the range of 0.5 to 4.0 carbon dioxide per volume of acid yogurt. Further described is a semi-solid carbonated yogurt made by this method. |
