abstract A method for producing chamomile oil with a total content of natural cis- and trans-spiroethers together of at least 1 wt. it consists in subjecting the fresh chamomile or extraction residues from the extraction of the chamomile to either steam distillation or water distillation. Water distillation is carried out at a pH of from 4 to 8, optionally with the addition of reducing agents. The camomile oil produced has a total natural cis- and trans-spiroether content of at least 2% by weight, the cis-spiroether content being at least 1.5% by weight. and a trans-spiroether content of at least 0.5% by weight
