abstract The essence of the solution is that a buffer with a pH of 9.5 to 10.0 pH is prepared from a solution of Na2 CO3 / Na2 CO3 and heated to the temperature of at least 58 degC, the crushed part of the oyster mushroom fungus (pleurotus oestratus) and / or the oyster-growing substrate of the spiked mycelium of the fungus are mixed into the solution, the fraction of the admixtures being in the range of 5 mm to 10 mm, the mixture of buffer and admixtures has a dry matter content of 5 to 8%, and is extracted with stirring, after which the filtrate is separated, heated, then neutralized and cooled, the precipitated protein is removed, the same is added to the liquid after centrifugation. the volume of 2-propanol cooled to 2 to 4 degC, the mixture is mixed and the precipitated crude beta-glucan is centrifuged. The skimmed beta-glucan is preferably dissolved in distilled water and dispersed to a colloidal solution at 90 to 100 degC by an ultrasonic disintegrator.
