abstract The present invention is based on the finding that stearinic fats, which can be obtained by dry fractionation or with solvent of sunflower oils high in stearic and oleic acids, optionally with the sowing of tempered stearin crystals, have a high content of solid fat at temperatures higher than 30 ° C, even higher than those of cocoa butter or other highly saturated tropical fats with similar content of triacylglycerol due to the presence of high disarrayed triacylglycerols in stearic acid, and with better melting point due to the presence of arachidic acid and behenic acid in these desaturated triacylglycerols, being at the same time healthier than real fats made from palm oil, palm fruits and coconut oil, or hydrogenated and transesterified vegetable oils.
