An iron fortified food is provided comprising an iron source in the form of solid capsules, wherein the capsules comprise a core comprising iron alginate, and an outer layer comprising calcium alginate. The capsules are suitable for fortifying both hydrated and dehydrated foods and are characterized by excellent loading capacity, along with good stability under local conditions of standard storage and use. The iron fortified food of the invention serves to prevent the occurrence of iron deficiency or to reduce an iron deficiency in a human. |
