abstract 1.- Inocula that is specially adapted to the direct inoculation of at least one strain of Bifidobacterium animalis ssp. lactis in a dairy substrate, for the transformation of the dairy substrate into fermented milk product adapted to human consumption, characterized in that the inoculum comprises, in mixture or in the form of a collection: - cysteine that is not bound to other amino acids peptide linked, and - at least one strain of B. animalis lactis. the cysteine and the "at least one" strain of B. animalis lactis are each contained in, or in the form of frozen granule (s) and / or lyophilized (s), the cysteine being, among others, L -cysteine base, where the formula in reduced form is HSCH2CH (NH2) CO2H, so that the pH of the solution obtained by: - defrosting of the granule (s), and / or - re-solubilization of the ( of the) lyophilisate (s) in a proportion of 1 to 2 gram (s) of lyophilisate (s) per 8 to 10 mL of H2O, is at least equal to 4, the cysteine being present in the inoculum in an amount of: - 1 gram for 1.1014 cfu of the "at least one strain" of B, animalis lactis (or, if there are more than the strains of B. animalis lactís), - 1 gram for 3.5.1010 cfu of the "at least one strain" "of B. animalis lactis (or, if there are more of the strains of B. animalis lactis). 2. The inoculum according to claim 1 characterized in that the cysteine is an L-cysteine that has a pH greater than 4 while in solution. 3.
