abstract Compositions containing iron, buffer and denatured protein capable of raising serum iron in an individual have been prepared. For example, microbeads with iron content have been prepared by spray drying, contained in a protein matrix and iron not fixed in a buffered composition that offers a gastric protection effect, which preserves iron in the form of Fe 2+ with greater availability and that improves the bioavailability of iron in humans in relation to previously known vehicles to provide iron to an individual.
