There is provided an improved mycelium in the form of an edible aerial mycelium suitable for use as a food product comprising a food ingredient for the preparation of a mycelium-based food such as bacon. The present invention relates to a method of preparing edible aerial mycelium suitable for use as a food product comprising a food ingredient. The present invention relates to an edible product comprising edible aerial mycelium, and a method of preparing an edible product comprising edible aerial mycelium, such as mycelium-based bacon. The present invention relates to a mycelium-based food product having a texture similar to a whole muscle product, wherein the whole muscle product is bacon. |
