abstract | The invention discloses an enzymatic method for synthesizing medium and long-chain triglycerides. Specifically, the oil rich in long-chain triglycerides is first treated to reduce the peroxide value; the treated oil rich in long-chain triglycerides is mixed with another substrate A, and the reaction is carried out under the catalysis of lipase. After the reaction, the lipase is recovered to obtain a fat mixture rich in MLCT, wherein the lipase is a lipase with transesterification activity; the substrate A includes triglycerides rich in medium-chain fatty acids or free fatty acids.
