The present invention provides a yeast polypeptide capable of improving exercise endurance and promoting exercise recovery, and a preparation method and application thereof. Wherein, the polypeptide content in the yeast polypeptide is more than 70wt%, and the peptides with molecular weight below 400D account for more than 60wt% of the total polypeptide content. Yeast polypeptide mainly contains dipeptide and tripeptide, the content of dipeptide is 20% to 30%, and the content of tripeptide is 20% to 30%. The preparation method of the yeast polypeptide includes the following steps: firstly, heat-treating the yeast milk, extracting nucleic acid, and collecting the deacidified yeast milk; then, subjecting the deacidified yeast milk to enzymatic hydrolysis; finally, isolating the yeast polypeptide. The yeast polypeptide obtained by the preparation method has good functions of anti-fatigue, improving exercise endurance and promoting exercise recovery. |
