The invention provides a green renewable material that can stabilize Pickering emulsion under high oil ratio: OSA modified starch spherulites. After enzymatic hydrolysis, acid hydrolysis and recrystallization of common corn starch to obtain starch spherulites, OSA is hydrophobically modified to obtain OSA starch spherulites, and the starch granules are used as emulsifiers to prepare Pickering emulsion, and the addition amount is 1.5% wt. Compared with high oil (70%) and high internal phase emulsion (75%), OSA starch spherulites can stabilize the emulsion for 6 months without breaking, showing good stability. The results of the present invention will provide an important reference for the novel modified starch base as an emulsifier to stabilize the Pickering emulsion, and can be widely used in the fields of food, cosmetics and the like. |
