abstract |
The present invention provides methods and systems for reducing the concentration of acrylamide in thermally processed products, and products produced by such methods and systems. The baked product can be sprayed with the riboflavin solution and then irradiated with a UV light source to initiate the monomer reaction of acrylamide and reduce the concentration of acrylamide in the baked product. In addition, riboflavin can be dissolved in the thermally processed product, after which the thermally processed product containing riboflavin is irradiated with a UV light source to initiate the monomer reaction of acrylamide and reduce the concentration of acrylamide in the baked product. |
