The application relates to a soft long shelf life protein bar and a preparation method thereof. The protein bar includes: protein powder, protein granules, sweetener, water, humectant, oil, thickener, emulsifier, salty agent, whey baking powder and acidity regulator. The protein bar has higher water activity, which can improve the phenomenon of the protein bar becoming hard during storage; and has a lower pH value, which can slow down the browning of color during storage. In addition, the preparation method of the protein bar according to the present application is simple and quick, and can fully maintain the quality of the protein bar during storage. |
