The preparation method mainly utilizes diluted lactobacillus plantarum for producing gamma-aminobutyric acid to ferment, lactose induces the lactobacillus plantarum for producing glutamate dehydrogenase, then glutamic acid is converted by enzyme to generate gamma-aminobutyric acid clear liquid, and the gamma-aminobutyric acid clear liquid is subjected to carbon desorption and concentration treatment and then is subjected to centrifugal crystallization to generate crystalline gamma-aminobutyric acid.
