Provided herein is a composition comprising choline or a choline salt and an omega-3 fatty acid for enhancing food nutrition, and the resulting food product. When the composition is used to enhance food nutrition, the food product has an acceptable taste or acceptable odor or the food product has a peroxide value of less than 50 mEq. Methods of making the compositions and foods are also provided. As shown in the attached figures, the findings outlined herein have resulted in unprecedented levels of sensory stability over time without significant changes in key sensory parameters typically seen in products containing high levels of choline and omega-3 fatty acids . |
