abstract | The invention relates to high-calcium fresh milk and a preparation method thereof, belonging to the technical field of dairy products. The invention comprises the following steps: (1) preheating raw milk, carrying out double-centrifugation sterilization, and carrying out cream separation to obtain skim milk and cream; (2) filtering and concentrating the skim milk obtained in the step (1) through an RO (reverse osmosis) membrane to obtain concentrated milk with 1.2-1.5 times of concentration; (3) and (3) cooling the concentrated milk after ultrahigh pressure homogenization, cooling the dilute cream after high pressure homogenization and high temperature sterilization, mixing the concentrated milk and the dilute cream for standardization, and filling to obtain a finished product. The high-calcium fresh milk prepared by the invention has high active calcium content, high active nutrient content and more nutrition, and has low microbial residue, long shelf life and long shelf life; meanwhile, the invention also provides a simple and convenient preparation method. |
