abstract The invention provides a microcapsule with oxidation resistance and a preparation method thereof, comprising the following steps: s1, preparing feruloyl oligosaccharide; s2, preparing a modified starch solution; s3, adding the feruloyl oligosaccharide prepared in the step S1 into the modified starch solution obtained in the step S2, and uniformly stirring to obtain a wall material solution; s4, preparation of a core material solution: dissolving a core material to be coated in a soluble solvent of the core material to obtain a core material solution; s5, preparing microcapsules: and mixing the wall material solution and the core material solution, carrying out ultrasonic crushing on the mixed solution, taking out, carrying out rotary evaporation, and carrying out spray drying to obtain the microcapsule particles. The invention compounds the feruloyl oligosaccharide and the modified starch to be used as the wall material of the microcapsule, thereby obviously improving the oxidation resistance and the storage stability of the microcapsule system.
