The present invention relates to a biocatalytic process for producing an aroma or an aroma mixture comprising the steps of preparing a transformation medium comprising plant components of the family gooseberry, rosaceous and/or vitidae; contacting the transformation medium with at least one fungus from the class basidiomycetes, the at least one fungus being capable of forming an aroma or a mixture of aromas on the transformation medium; converting the plant component into the aroma or aroma mixture by means of the fungus; and optionally recovering the aroma or mixture of aromas, wherein the aroma or mixture of aromas preferably comprises at least one compound selected from the group consisting of 2-octanone, 2-nonanone, 2-undecanone, linalool oxide, benzaldehyde, geraniol, 2-octanol, methyl anthranilate, 2-aminobenzaldehyde, and linalool. |
