abstract | The invention discloses a method for needle sampling-microextraction-catalytic color development to detect biogenic amines. It belongs to the technical field of food analysis. The basic principle of this method is that BAs are oxidized under the catalysis of diamine oxidase (DAO) to generate H 2 O 2 , and then ATO catalyzes the oxidation of H 2 O 2 produced by BAs to 3,3,5,5-tetramethyl bicarbonate Aniline (TMB) developed color, and BAs content was indirectly detected by detecting the amount of H 2 O 2 . The method has good selectivity for histamine, putrescine and cadaverine, the linear range of the standard curve is 5-50 μM and 50-1000 μM, and the detection limit is 1.52 μM. The method of the present invention successfully detects the BAs content in the meat sample (measured by the total amount of histamine, putrescine and cadaverine), so as to indicate the spoilage degree of the meat. |
