abstract | The invention provides a selenium-rich flavor peptide separated from selenium-rich seaweed, a preparation method and application thereof. The method comprises (1) carrying out staged enzymolysis on seaweed powder by biological enzyme to obtain an enzymolysis liquid; (2) carrying out ultrafiltration separation treatment on the enzymolysis liquid so as to obtain mixed flavor-developing peptide; and (3) purifying and separating the mixed taste-presenting peptide by using reverse phase high performance liquid chromatography so as to obtain the target taste-presenting peptide. The taste peptide has an amino acid sequence shown in SEQ ID NO. 1. The flavor development peptide has obvious flavor development effect, can simultaneously develop delicate flavor and sweet taste, has low threshold value and high purity, can be applied to multiple branches of the food field, improves the flavor of food, and can also improve the nutritive value of the food. Meanwhile, as the organic selenium is contained, the organic selenium can be prepared into health care products with anticancer function and/or cancer prevention function. |
