titleOfInvention | A walnut meal anti-inflammatory peptide WPL and its application |
abstract | The invention belongs to the technical field of food deep processing, and in particular relates to an anti-inflammatory peptide isolated from an enzymatic hydrolysis product of walnut dregs and an application thereof. The amino acid sequence from the C-terminal to the N-terminal of the anti-inflammatory peptide is: Trp-Pro-Leu, referred to as WPL. The present invention prepares anti-inflammatory polypeptide from walnut dregs by enzymatic hydrolysis, purifies by ultrafiltration and Sephadex gel chromatography, identifies the polypeptide sequence by LC-MS/MS, and uses molecular docking technology to screen anti-inflammatory active fragments for scoring Higher peptides were artificially synthesized and their anti-inflammatory activity was verified. It was found that WPL has anti-inflammatory activity and has different degrees of inhibition on the production of three inflammatory mediators (NO, TNF-α, IL-1β). Molecular docking results showed that WPL and iNOS were mainly connected by π-π stacking, alkyl bond, π-alkyl bond and hydrogen bond. |
