The invention discloses 4,6-α-glucosyltransferase and its application in improving the quality of steamed bread, belonging to the technical field of genetic engineering. The 4,6-α-glucosyltransferase (gtf16) derived from Lactobacillus fermentum (Lactobacillus fermentum) was prepared by heterologous expression to obtain 4,6-α-glucosyltransferase, and the obtained 4,6-α-glucosyltransferase α-glucosyltransferase is used in the preparation of modified dextrin. The prepared modified dextrin has the advantages of low calorie, large molecular weight, and resistance to hydrolysis by digestive enzymes. The method has low energy consumption, short time, high conversion efficiency and few by-products in the product, and is of great significance for the industrial preparation of high molecular weight modified dextrin. Adding this modified dextrin to steamed bread can delay starch aging and increase the shelf life of steamed bread. |
