abstract | The invention establishes a single enzymolysis method for reducing the potential sensitization of the formula milk powder. Provides a method for reducing potential sensitization of whey protein by acting on whey protein solution through change of enzymolysis conditions, thereby causing structural change of main allergen in the whey protein. The enzymolysis process comprises enzymolysis condition optimization and sensitization evaluation. The invention adopts enzymolysis technology, carries out specific site cutting on protein by an enzymolysis method, breaks protein peptide bonds, hydrolyzes the allergic protein into small molecular peptide fragments, reduces the molecular weight, or evaluates the allergenicity of the protein after enzymolysis by changing the tertiary structure of allergen epitope and cutting off some epitope effects on the surface of the allergen protein and utilizing in vitro specific antibody and mouse sensitization model. |
