abstract The invention relates to a method for producing vacuum rice dumplings by using a bag feeding type vacuum packaging machine, which comprises the following steps: (1) soaking dried rice in water of 37 deg.C; (2) putting the soaked rice into a rice draining machine for draining; (3) uniformly mixing the drained rice and the seasoning to obtain seasoning rice; (4) quantifying the seasoned rice by a weighing method or a volume method; (5) wrapping the seasoner rice and corresponding stuffing together with the rice dumpling leaves, and bundling to obtain a raw rice dumpling; (6) filling the raw rice dumplings into a cooking bag by using a bag feeding type vacuum packaging machine, and adding water required for cooking the rice dumplings into the cooking bag; (7) vacuumizing and sealing a cooking bag filled with raw rice dumplings and water required by cooking the raw rice dumplings to obtain vacuum raw rice dumplings; (8) and (4) sterilizing and cooking the vacuum raw rice dumplings at high temperature and high pressure. The invention has the advantage of good consistency of the taste of the rice dumpling and solves the problem of poor consistency of the taste of the vacuum rice dumpling produced by the existing one-time heating process.
