abstract | The invention provides a method for non-directionally screening flavors and fragrances and derivatives thereof in food based on gas phase mass spectrum characteristic fragments. Collecting the mass-to-charge ratio and relative abundance of fragment ions of the compound through an NIST spectral library and a standard substance experiment, and establishing a database; calculating to obtain characteristic ion fragments of a class of compounds through a TF-IDF algorithm, and qualitatively judging whether the class of compounds exist in an unknown sample; and finally, selecting the compound with the most similar structure to that of the unknown sample by calculating the matching number of the fragment ions of the sample data and the compound in the database, the relative abundance ratio deviation of the fragment ions and the ranking deviation of the fragment ions, selecting the matched fragment ions with the relative abundance of more than or equal to 0.1 as the quantitative ions, and making a standard curve for semiquantifying the unknown sample. The invention has wide screening range and high efficiency, can simultaneously realize qualitative and semi-quantitative detection of the flavors and the derivatives thereof in the food, and has scientific and accurate result. |
