abstract Water and energy efficient systems and methods for producing lime-cooked corn dough are described. Such methods generally include adding water to corn kernels having an endosperm component, a germ component, a pericarp component, and a cap component in a first predetermined ratio. The corn kernels are regulated using a first regulator for a first predetermined amount of time such that moisture absorption is within a first predetermined range. The corn kernels are limed. The corn kernels are cooked in a steam environment using a cooker. After cooking the kernels, water is added to the kernels at a second predetermined ratio, and the kernels are regulated using a second regulator for a second predetermined amount of time such that moisture absorption is within a second predetermined range . The corn kernels are milled using one or more mills.
